Makes 1.5L to 2L Approximately
Ingredients
- 1 can of condensed Milk
- 1 can of Chilled coconut cream
- 2 Eggs separated
- 1 cup of mashed stewed
- 2 Tablespoon full Sugar
- Feijoas
- 1 cup Mashed fresh feijoas
Method
Step 1
Separate your yolks and beat the yolk
Step 2
Add condensed milk until the mixture is pale (will take 2-4mins)
Step 3
In a separate bowl, beat egg whites until stiff peaks form.
Step 4
Add both fresh and stewed feijoas to the condensed milk mixture, combine and set aside.
Step 5
In another separate bowl take chilled coconut cream and beat until it has thickened.
Step 6
Fold your egg whites into the condensed milk and then gently stir in your coconut cream.
Step 7
Add the ice cream mixture to a dish and set in the freezer for about 5hrs. You may need to thaw the ice cream
