Ingredients
- 12 large Ripe feijoas
- ¾ Cup castor sugar
- 1 tbsp castor sugar (Extra)
- Extra whipped cream
- 2 tbsps lemon juice
- 3 Egg whites
- 500 mls Whipped cream
- Borage flavors
Method
Step 1
Halve the feijoas and scoop out all the flesh.
Step 2
Place the feijoas in a saucepan with lemon juice and castor sugar. Simmer until soft, then process or mash until smooth. Chill.
Step 3
Beat egg whites until stiff peaks form. Gradually add the extra castor sugar, one tablespoon at a time, while continuing to beat until stiff peaks form.
Step 4
Fold whipped cream into the processed feijoa mixture, then fold in the beaten egg whites.
Step 5
Transfer the mixture to serving glasses and chill until ready to serve.
Step 6
Serve decorated with extra whipped cream and borage flowers.
