Feijoa sauce is An excellent fruity sauce for all cold meats or pies
Ingredients
- 1.5Kg feijoas
- 2 apples
- 1 large onion
- 2 cups of brown sugar
- 1 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 teaspoon ground cloves
- 2 teaspoon ground ginger
- 3 cups of malt vinegar
Method
Step 1
peel and chop the feijoas.
Step 2
peel, core and chop the apples and finally chop the onion.
Step 3
Combine all the ingredients in a saucepan and cook very gently uncovered for 2-2 1/2 hours.
Step 4
process the sauce in a food processor or blender until it is fairly smooth.
This is easier than pushing it through a sieve and making a much thicker and richer sauce
Makes about 1.5 Litres.
