gluten-free (GF) cup flour, is a type of flour suitable for people who have celiac disease or are sensitive to gluten. This flour is made from gluten-free grains such as rice, corn, or chickpeas and is used as a substitute for wheat flour in baking and cooking.
Ingredients
- 1 ½ gluten-free cup flour 225g
- 2 teaspoon baking soda
- ½ Cup sugar 90g I like to use brown sugar as it adds a nice flavour
- ½ Cup ground almonds or desiccated coconut 55g
- 1 tsp ginger or cinnamon
- 1 egg
- ½ Cup almond milk
- 1-1 1/2 Cup feijoa flesh 220g aprroximately 9-10 feijoa.
- 1 teaspoon vanilla essence
- 1/2 cup walnuts (optional)
Method
Step 1
Preheat your oven to 180 degrees Celsius, prepare a loaf tin, line and or grease your tin.
Step 2
Scoop out the flesh of your feijoas and mash with a fork.
Step 3
Place the dry ingredients: Flour, baking powder, sugar, and ground almonds into a medium to large mixing bowl. Whisk or use a fork to combine the ingredients.
Step 4
In a second bowl whisk together the eggs, milk, and vanilla.
Step 5
Add the mashed feijoa to the wet ingredients and mix to combine.
Step 6
Add the wet ingredients to the dry ingredients and mix gently until just combined. Fold in walnuts. Don't over mix.
Step 7
Pour into the prepared loaf tin.
Step 8
Bake at 180 degrees Celsius for 40-45min until the loaf has risen, is golden and when you insert a skewer it comes out clean.
Step 9
Cool in the tin for at least 5 minutes before tipping out onto a cooling rack.
