Ingredients
- For the Dumplings:
- Ripe feijoas
- sugar
- Flaky pastry
- For the Lemon Sauce:
- 3 Tablespoon Cornflour
- 1 Cup Hot water
- 1 Teaspoon Grated lemon rind
- 3 Tablespoon Lemon Juice
- 1 Oz Butter
- ½ Cup Brown sugar
Method
Step 1
Roll pastry ⅛ inch thickness and cut into squares about 4 inches.
Step 2
peel the feijoas and place a whole one in the center of each piece of pastry.
Step 3
Sprinkle with a little sugar and wrap the pastry to encase the fruit. Place on a baking tray and bake at 450 degrees F for 10 minutes, lower the temperature and cook for a further 10 minutes. and serve hot with lemon sauce
Step 4
Sauce: Mix the sugar, cornflour and water together and cook while stirring continually until the sauce is thick and clear. Gradually stir in lemon rind and juice, then the butter. Makes 1 ¼ cups.
