A Banana and Feijoa Cake is a delicious dessert that combines the natural sweetness of ripe bananas with the unique flavor of feijoas, creating a harmonious blend of tropical tastes.
Ingredients
- ¾ cup brown sugar
- 125 grams soft butter
- 2 eggs
- 1½ cups of plain flour
- 1 teaspoon bicarb soda
- 1½ teaspoons baking powder
- 1 teaspoon vanilla
- 2 –3 over ripe bananas mashed
- 6 ripe feijoas mashed
Method
Step 1
Preheat oven to 170-180 C.
Step 2
Cream butter and sugar until creamy. Add the eggs one at a time.
Step 3
Allow mixture to become aerated and fluffy. Incorporate vanilla.
Step 4
Fold in bananas and feijoa.
Step 5
Sift all the dry ingredients together and fold into wet mixture, don’t overwork the mixture. Prepare 20 cm round cake tin with baking paper.
Step 6
Pour mixture in and smooth out.
Step 7
Bake for 35 minutes check with skewer it may need more time.
Step 8
Once the cake is cooled, level the top of the cake cover with icing of choice or standard icing of 40- 50 g butter mixed with 2-3 cups of icing sugar a dash of vanilla and add milk according to consistency required.
Step 9
If preferred a dash of lemon juice can be added.
Step 10
Beat until well combined and cover cake
