Ingredients

  • 2 cups of peeled, chopped feijoas
  • 1 cup boiling water
  • 1 cup Sugar
  • 50 g Butter
  • 1 egg
  • 2 cups Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda

Method

Step 1

Preheat oven to 180°C bake and grease and/or line a loaf tin. Place feijoas, boiling water, sugar and butter in a large saucepan. Simmer for 5 minutes, then set aside to cool for 5 minutes.

Step 2

Mix in egg, flour, Baking powder and Baking soda. pour into prepared baking Tin Bake for 35 to 45 Minutes until loaf springs back when lightly pressed and a skewer inserted into the centre comes out clean.

Step 3

Cool in tin for 10 minutes, then transfer to a wire rack to cool completely. Delicious sliced and spread with butter!

Tips

For an extra flavor kick, add some chopped crystallized ginger to the loaf. Feijoas and ginger are a great combination!
