A feijoa and almond tart is a delectable dessert characterized by a buttery pastry crust filled with a mixture of feijoa pulp and a creamy almond filling.

The feijoas, also known as pineapple guavas, lend a unique sweet and tangy flavor to the tart, while the ground almonds provide richness and texture. Ingredients:

For the pastry:

  • 170g plain flour
  • 2 tbsp sugar
  • 75g butter
  • 1 egg

For the filling:

  • 125g butter
  • 3/4 cup of sugar
  • 125g ground almonds
  • 2 tbsp flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1 tsp lemon zest
  • 2 cups feijoa pulp, roughly chopped
  • 1/4 cup sliced almonds

Method

Step 1

Preheat the oven to 170 degrees Celsius (approximately 340 degrees Fahrenheit).

Step 2

In a food processor, combine the first measure of flour, sugar, and butter. Pulse/whizz until the mixture resembles fine breadcrumbs.

Step 3

Add the egg to the mixture and pulse again until a dough forms.

Step 4

Roll out the pastry dough to fit a 22cm lined tart dish.

Step 5

Blind bake the pastry by placing baking paper over it and filling it with rice (or pie weights) to prevent it from puffing up. Bake for 15 minutes to dry out the pastry.

Step 6

While the pastry is baking, prepare the filling. In a pot, melt the butter over low heat.

Step 7

Remove the melted butter from the heat and add the sugar, ground almonds, flour, baking powder, egg, and lemon zest. Mix well until combined.

Step 8

Once the pastry has baked for 15 minutes, remove it from the oven and spread the chopped feijoas over the pastry base.

Step 9

Spread the filling mixture evenly over the feijoas.

Step 10

Sprinkle the sliced almonds over the top of the filling.

Step 11

Place the tart back in the oven and bake for approximately 50 minutes, or until the tart is golden brown and the filling is set.

Step 12

Once baked, remove the tart from the oven and allow it to cool in the tart dish before serving.
