Ingredients
- 3 to 4 feijoas
- Water
- ½ Teaspoon Grated orange rind
- 3 to 4 Tablespoons orange juice
- ¼ Cup sugar
- 1½ Tablespoons quick cooking tapioca
- 1 egg white
Method
Step 1
Peel the feijoas, and slice roughly. then put them in a pan with clean water.
Step 2
Cover the pan and bring to the boil. simmer for a few minutes until pulpy. stir in the orange rind and juice. sweeten to taste with sugar.
Step 3
stir in the tapioca and bring to the boil. cook, stirring, for 1 to 2 minutes or until it clears. Allow to cool.
Step 4
Whisk the egg white until stiff, fold into the cool mixture. pile into serving glasses and chill
