Feijoa is an attractively aromatic fruit perfect for pies or topped with crumble mixtures. It easily turns into jam, jelly, or chutney. This article teaches you how to make feijoa and pineapple jam. While I have already shared a similar recipe on this blog, I found another version from Tui Flower’s Cookbook, 1968, and decided to share it with you.
Ingredients
- 1½ lb. Feijoas, weighed after peeling
- 2 cups crushed pineapple
- ¼ cup lemon juice
- 1½ lb sugar
Method
Step 1
cut the feijoas roughly and mix with the pineapple and lemon juice in a large saucepan.
Step 2
then, cook until the fruit is tender.
Step 3
Add the sugar and boil briskly until a little tested on a saucer will give setting signs.
Step 4
Allow to cool for a few minutes before putting into hot, dry jars. seal when cold
Step 5
Makes about 2½ lb.
