Ingredients
- 1 cup peeled, chopped feijoas.
- ¾ Cup plain flour
- 1 Teaspoon baking powder
- ½ Cup sugar
- 2 Eggs
- 3½ Oz Butter (100g)
- Grated rind
- 1 lemon
- icing sugar
Method
Step 1
sift flour and baking powder and stir in sugar.
Step 2
Beat eggs with melted butter.
Step 3
Add to dry ingredients

Beat well

Add feijoas, lemon rind and stir

Turn into pie dish

Bake at 400°F for 15 minutes: you should preheat your oven to 400°F (approximately 204°C) and bake the pudding at this temperature for the first 15 minutes. Then, bake at 350°F for 25 minutes (middle oven): After the initial 15 minutes at 400°F, you should reduce the oven temperature to 350°F (approximately 177°C) and continue baking the pudding for an additional 25 minutes. you should place the pudding on a rack positioned in the middle of the oven, ensuring even heat distribution.
