Ingredients
- 125g Butter
- ¾ Cup sugar
- 2 eggs
- 5-6 feijoas
- 1 cup flour
- 2tsp Baking powder
- ½ Cup wholemeal flour
- ¼ Cup milk
- 1 tsp Baking soda
- 1 cup whipped cream
- Icing sugar
Method
Step 1
Cream the butter and sugar until light and fluffy.
Step 2
Add the eggs one at a time. Beat well. Cut the feijoas in half and scoop out the flesh. Mash feijoas with a fork. Stir into the creamed mixture.
Step 3
Sift the flour and baking powder.
Step 4
Add the flour and whole Meal flour to the creamed mixture. Mix well. Put into a greased 20cm ring tin. Bake at 180°C for 30 to 35 minutes. Leave cake to cool completely.
Step 5
Cut cake in half horizontally forming 2 layers.
Step 6
Fill between the layers with whipped cream. Dust the top with icing sugar.
