Feijoa compote is a fruit-based dessert or condiment made by cooking the flesh of ripe feijoas with water, a dash of lemon juice, and sugar until the fruit is soft and the mixture has thickened. In this article, you’ll learn how to make feijoa compote with dried apricots. While I have already shared a similar recipe on this blog, I found another version from Tui Flower’s Cookbook, 1968, and decided to share it with you.
Ingredients
- 1 lb. Feijoas
- juice of 1 lemon (2 or 3 tbsp)
- 6 to 8 Dried apricots
- Water
- Sugar
Method
Step 1
peel the feijoas and cut into thick slices.
Step 2
put in a saucepan with the lemon juice and the apricots, finely chopped. then Add just enough water to allow the fruit to stew.
Step 3
once the fruit is tender Add sugar to suit own taste and simmer gently until the syrup is reduced in volume and the mixture is reasonably thick.
serve with cream or not as preferred
