Feijoa compote is a fruit-based dessert or condiment made by cooking the flesh of ripe feijoas with water, a dash of lemon juice, and sugar until the fruit is soft and the mixture has thickened.

Ingredients

  • 20 ripe feijoas
  • Several dessert spoons of water (enough to prevent sticking)
  • A dash of lemon juice (to taste)
  • ¼ cup of sugar (to taste)

Method

Step 1

Prepare the Feijoas: Scoop the flesh out of the feijoas and place it in a saucepan.

Step 2

Add Water and Lemon Juice: Add several dessert spoons of water to the saucepan, just enough to prevent the fruit from sticking to the bottom. Add a dash of lemon juice to taste.

Step 3

Cook the Feijoas: Bring the mixture to a boil. Reduce the heat and simmer until the fruit is soft and the mixture has reduced.

Step 4

Mash the Fruit: Use a masher or a fork to mash the softened fruit to your desired consistency.

Step 5

Add Sugar: Add approximately ¼ cup of sugar (adjust to taste) to the mashed fruit.

Step 6

Re-boil: Return the mixture to the heat and boil until the sugar has dissolved and the compote reaches the desired consistency.

Step 7

Cool and Serve: Allow the compote to cool slightly before serving. It can be served warm or cold.
