Feiijoa curd is a type of spread or topping made from feijoa fruit, zest, sugar, eggs, and butter. It has a smooth and creamy texture, similar to custard, and is typically used as a filling for pastries, cakes, or tarts, or simply spread on toast, scones, or biscuits.
Ingredients
- 5 feijoas
- juice of 1 lemon (2 or 3 tbsp)
- ¾ cup caster sugar
- 2 eggs plus 2 extra egg yolks
- 100g butter
Method
Step 1
scoop out the feijoa flesh and puree in a blender. push the puree through a sieve with lemon juice.
Step 2
in a heavy-bottomed saucepan, mix together sugar, eggs and extra yolks. while whisking the bag mixture add knobs of butter until all combined. continue to stir curd over the gentle heat until mixture is thick.
Step 3
Add feijoa puree and heat through, still stirring, for about another 3 minutes.
Step 4
Pour into sterilized jars. use some for the cake and the rest will keep in the fridge for a week.
Enjoy
