Ingredients
- 1 cup Feijoas, Peel and dice
- 150g Dates, chopped
- 100g crystalized ginger, chopped.
- 250ml Boiling water
- 150g Brown sugar
- 50g butter
- 1 Egg, Beaten
- 1tsp Vanilla Extract
- 270g Flour
- 1tbsp Ginger (Ground)
- 1tsp Baking powder
- 1tsp baking soda
Method
Step 1
Preheat oven to 180 degrees Celsius on bake and Grease a loaf tin.
Step 2
place Feijoas, dates, ginger (chop), water, Butter and sugar into a saucepan and bring to a boil. then lower the heat and simmer for 5 minutes. remove from heat and cool.
Step 3
Mix together flour, Ginger (Ground), Baking powder and soda and add to the fruit mixture once cooled along with egg and Vanilla.
Step 4
Do not overmix (this mixture is quite thick)
Step 5
Spoon mixture into Greased Tin and Bake for 45minutes or until a skewer comes out clean
