Feijoas, also known as pineapple guavas, have a unique tropical flavor that’s both sweet and tangy. A feijoa fool involves blending or mashing feijoas and combining them with whipped cream or custard to create a creamy dessert similar to the traditional English fruit fool.
Ingredients
- 1kg feijoas
- 130g Caster sugar (or to taste)
- 50ml Water
- 1 x 10g Sachet powdered gelatine.
- 50ml hot water
- 300ml cream
Method
Step 1
Peel and chop the feijoas, then place them in a saucepan with sugar and water. Simmer covered for about 10 minutes until the fruit is cooked.
Step 2
After simmering, puree the cooked feijoas in a blender or food processor. Pass the puree through a sieve to remove any solids, ensuring a smooth texture. You should end up with 700ml of fruit puree.
Step 3
Thoroughly dissolve the gelatine in hot water, then whisk it into the fruit puree. Allow the mixture to cool, whisking occasionally to prevent it from setting.
Step 4
Taste the cooled puree and add additional sugar if needed. Keep in mind that a slightly tart flavor is desirable for a fruit fool.
Step 5
Whip the cream to soft peak stage. Gently fold the whipped cream into the cooled fruit puree. Be careful not to overmix to maintain a light texture.
Step 6
Spoon the mixture into serving glasses and refrigerate for several hours until set.
