Feijoa fritters are created by coating feijoa slices in a batter and frying them until they’re crispy and golden brown. Ingredients
- 6 large feijoas, peeled and sliced
- 1 egg, whisked
- ¾ cup milk
- 50g butter, melted
- 1 cup flour
- 2 tsp baking powder
- ¼ cup cornflour
- 1 tsp pure vanilla extract
- Oil to cook 1/4 cup caster sugar + 1 tsp cinnamon to coat
Method
Step 1
Mix the wet ingredients into the dry ingredients and stir until just combined (The batter should be quite thick).
Step 2
Heat oil over a medium heat in a deep pan or pot, about 1cm deep. such that Oil is hot enough when a chopstick or wooden spoon creates bubbles when dipped into the oil.
Step 3
If oil is smoking turn down the heat and wait for it to settle down.
Step 4
Coat feijoa slices generously in batter, and fry in batches, turning over when one side is golden and crispy.
Step 5
Sprinkle over cinnamon sugar and enjoy warm!
