A feijoa muffin is a delightful baked treat that incorporates the unique flavor of feijoas, complemented by the warm spices and the sweetness of sultanas. The muffins are made by combining finely diced feijoas and sultanas with a blend of dry ingredients, including flour, baking powder, and mixed spices. The mixture is then moistened with melted butter and milk, creating a rich and flavorful batter. Baked until golden brown, these muffins offer a moist, fruity, and spiced experience that makes for a perfect snack or breakfast option

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 2 tablespoons mixed spice
  • 2 cups finely diced dried feijoas
  • ⅔ cup sultanas
  • 125 grams unsalted butter melt and cool
  • ¾ cup milk (180 mls)

Method

Step 1

Preheat your oven to 200°C (or 180°C for fan bake).

Step 2

In a large bowl, combine the flour, baking powder, and mixed spice.

Step 3

Add the finely diced feijoas and sultanas to the dry ingredients, mixing well to ensure they are evenly distributed.

Step 4

In a separate bowl, combine the melted and cooled butter with the milk.

Step 5

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.

Step 6

Spoon the batter into a sprayed muffin tray or line the tray with paper patty cases.

Step 7

Bake in the preheated oven for 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack to cool completely.

Enjoy these feijoa muffins warm or at room temperature. They pair wonderfully with a cup of tea or coffee.
