Feijoa squares are a dessert made with a thickened, sweetened feijoa filling sandwiched between layers of spiced shortcake dough, baked until golden brown, and topped with a sprinkle of icing sugar and cinnamon.

Feijoa Filling

  • 2 cups sliced feijoas
  • Brown sugar (quantity not specified; assume to taste, typically around 1/4 to 1/2 cup)
  • 2 teaspoons cornflour
  • 2 teaspoons lemon juice

Shortcake

Ingredients

  • 125g butter
  • 1 cup flour
  • 1 tsp cinnamon
  • 1 egg
  • 1 tsp Baking powder
  • 1 tsp Allspice
  • 1 cup sugar

Method

Step 1

Prepare the Feijoa Filling: Slice the feijoas and place them in a saucepan. Add brown sugar to taste (typically around 1/4 to 1/2 cup, but adjust according to your preference). Cook the feijoas with the brown sugar until they soften.

Step 2

In a small bowl, mix 2 teaspoons of cornflour with 2 teaspoons of lemon juice until smooth. Add the cornflour mixture to the cooked feijoas and stir until the mixture thickens. Set aside to cool.

Step 3

Prepare the Shortcake Dough: Preheat your oven to 150-175°C (302-347°F).

Step 4

In a mixing bowl, cream together 125g of butter and 1 cup of sugar until light and fluffy.

Step 5

Add 1 egg to the creamed mixture and mix well.

Step 6

In a separate bowl, sift together 1 cup of flour, 1 teaspoon of cinnamon, 1 teaspoon of baking powder, and 1 teaspoon of allspice.

Step 7

Gradually add the dry ingredients to the wet mixture and mix until combined, forming a dough.

Step 8

Assemble the Squares: Divide the dough into two equal parts, Press one half of the dough into the bottom of a baking dish to form an even layer. Spread the cooled feijoa filling evenly over the bottom layer of dough. Roll out or press the remaining half of the dough to cover the feijoa filling. It's okay if it doesn't cover perfectly; it can be patched together. Bake in the preheated oven for 20 to 30 minutes, or until the top is golden brown and the shortcake is cooked through.

Step 9

Finishing Touches: Once baked, remove from the oven and let cool. Sprinkle with icing sugar and a little cinnamon before cutting into squares.
