A gluten-free feijoa cake is a type of cake that is made without gluten-containing ingredients. Gluten is a protein found in wheat, barley, rye, and their derivatives.
People with celiac disease, gluten sensitivity, or those choosing to follow a gluten-free diet for other reasons avoid consuming gluten as it can cause adverse health effects for them.
I prefer one-bowl recipes, and that’s how I made this one. We recommend adding the ingredients in the order listed. I used organic raw rapadura sugar, so it doesn’t have to be fine to create a light, fluffy cake.
Ingredients
- 2 cups of mashed ripe feijoa
- 1/3 cup of melted butter or coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup of brown rice flour
- 1/2 cup almond meal or ground almonds
- 2 Tablespoons Tapioca flour
- 2 teaspoons of GF baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
Method
Step 1
mix all the wet ingredients.
Step 2
then added in the dry ingredients into the same bowl and mix them again well.
Step 3
Cook in a pre warmed oven at 180 Celsius for approx. 45 minutes.
The outcome always depends on your oven, so use the skewer test. Since it’s a relatively small cake, grease one of your smaller tins. Let it cool until it’s cool enough to handle. Both of my cakes just slid out of my old-school, non-non-stick greased cake tins after running a knife around them.
