Ingredients
- 170g butter (at room temperature)
- 1½ Cups sugar
- 4 large eggs, lightly beaten
- 1 Teaspoon vanilla
- 1½ cups flour
- 2 Teaspoon baking powder
- ½ Teaspoon salt
- 1 cup feijoa curd
Method
Step 1
preheat oven to 180°C. Grease a 23cm round spring form cake tin and line with baking paper
Step 2
In the bowl of an electric mixer, cream butter and sugar together until light and fluffy. Add the beaten eggs, a little at a time, beating well between each addition, then add vanilla.
Step 3
Add flour, baking powder and salt, then combine with a spoon until just mixed. Spread half the cake batter into prepared tin. Spoon over feijoa curd, leaving about 2cm from the edge of the tin.
Step 4
With the second half of the cake mixture, dollop Spoonfuls over the curd and gently spread to smooth the top of the cake. Bake in the oven for 1 hour- you may need an extra 10 minutes or so.
Step 5
Let cake cool in tin. When cool, place on a serving plate and dust with icing sugar
