Ingredients
- 1kg Feijoa flesh, roughly chopped
- 3 cups white sugar
- 6 cubes of crystallized ginger, finely (approx 2tbsp)
- juice of half a lemon
- 1 tsp butter
Method
Step 1
prepare your sterilized jars and lids and put a saucer in your freezer.
Step 2
in a large pot, combine the feijoa fresh, crystallized ginger, sugar and lemon juice. over a low heat, stir until the sugar has dissolved (and nothing catches on the bottom of the pot and burns).
Step 3
Add butter, then crank up the heat to a rapid boil of 5 minutes.
Step 4
Remove pot from the heat then test a small drop on the extra-cold saucer so it cools down rapidly. the surface of the jam should crinkle if you press it with a finger or spoon. if it's not quite to your liking, put the pot back on.
