feijoa steak sauce also known as BBQ Sauce is a type of sauce typically made from fruits such as feijoas along with other ingredients like vinegar, sugar, and spices. It’s often used as a condiment or marinade for steak or other grilled meats.

Ingredients

  • 1.6 Kg Feijoas
  • 1.3 Kg Sugar
  • 6 Teaspoon Salt
  • 8 Teaspoons cayenne
  • 8 Teaspoons Ground cloves (one 40g packet)
  • 1 Teaspoon Ground Ginger
  • 1.5 Liters Malt vinegar (two 750 Ml DYC bottles)

Method

Step 1

Top and Tail the feijoas (don't peel)

Step 2

Put everything in a pot and bring to the boil

Step 3

simmer for two hours

Step 4

let cool and whizz in a food processor or with a stick blender

Step 5

Return to pot and simmer for another 2 hours

Step 6

Bottle in clean sterilized bottles

The Feijoa fruity flavor adds a tangy and slightly sweet contrast to the savory taste of the meat, enhancing its overall flavor profile.

Always leave sauces and pickles/chutneys to sit for a month before using to allow flavors to fully develop. often they become much less vinegary after time.
